Named for a Legend
In Persian and Afghan legend, the Simorgh is the great bird reborn from flame - wise, generous, and impossible to keep down. When our family left Kabul and rebuilt a life in Christchurch, no name fit better.
Our kitchen rises from fire too. The charcoal is lit before noon and glows until close. Kebabs are skewered by hand, palaw is steamed with saffron, mantu are folded one by one each morning, and the chai pot is never empty.
